Callebaut Ruby chocolate couverture launched to an eager audience in 2018. Made from a specially-cultivated ruby cocoa bean, it has a naturally pink colour, and a naturally-occuring slightly sharp flavour of red berries, which cuts nicely through a sweetness you would compare to that of a white chocolate. Like its Callebaut contemporaries, this chocolate is made in Belgium.
